hickory smoked butternut squash

The little woman and I just ate dinner. I took 3 large butternut squash, skinned them, cut them in half and deseeded. Then I cut the squash into 1 inch chunks and hickory water smoked them (in Brinkman 2 tier game smoker) for 1 1/2 hours. Put squash in a mixing bowl, add 1/2 cup butter and 1/4 cup brown sugar and beat as mashed potatoes. Serve hot. What a treat. Try it!!! Dano

Sound's good Danno, my uncle has just grown a load of this stuff and in my view pretty tasteless but your method sounds good. Just have to remember where the smoker is!

By the mixture instructions, it almost sounds like you are having squash and smoke flavored butter. Which to me would be better, because I can't choke down squash, sorry.
